Description
Sticky, soft-baked sweet potato donuts topped with caramelized pineapple rings. These baked rings are warmly spiced and perfect for flipping straight from the oven for a cozy, tropical-inspired dessert.
Ingredients
2 medium sweet potatoes, peeled, boiled & mashed
1 cup all-purpose flour
1/2 cup brown sugar
2 eggs
1/2 cup whole milk
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp baking powder
1/4 tsp salt
1/4 cup melted butter
8–10 pineapple rings, drained
Extra brown sugar & butter for bottom glaze
Instructions
1. Preheat oven to 350°F (175°C) and grease a donut pan.
2. In a bowl, mash the boiled sweet potatoes until smooth.
3. Add eggs, milk, vanilla, and melted butter. Mix until combined.
4. In a separate bowl, combine flour, baking powder, cinnamon, nutmeg, and salt.
5. Gradually add dry ingredients to wet mixture and whisk until smooth.
6. In each donut cavity, place a pineapple ring and sprinkle with a little brown sugar and butter.
7. Pour batter over the pineapple ring to fill the donut cavity.
8. Bake for 18–22 minutes or until golden and set.
9. Let cool for 5 minutes, then gently flip onto a tray to reveal the caramelized pineapple.
10. Serve warm or at room temperature.
Notes
Best served warm right after flipping.
Store in an airtight container at room temperature for up to 2 days.
Reheat gently in the oven or toaster for best texture.
Try substituting canned peaches or apples if you’re out of pineapple.
