Ingredients
→ Teriyaki Chicken
450 g chicken breast, strips
120 ml teriyaki sauce
2 garlic cloves, minced
15 ml honey
15 ml neutral oil
Salt & black pepper
→ Grilled Pineapple Pear Salsa
150 g pineapple, diced
1 ripe pear, diced
40 g red onion, chopped
1 jalapeño, diced
Juice of 1 lime
8 g cilantro, chopped
Salt & black pepper
→ To Serve
8 small tortillas
Optional: shredded cabbage
Optional: sliced avocado
Optional: lime wedges
Instructions
1. Mix teriyaki sauce, garlic, honey, oil, salt, pepper. Coat chicken. Chill 30 minutes.
2. Caramelize pineapple slices on grill 2–3 minutes each side. Set aside.
3. Grill chicken strips 3–4 minutes per side. Rest, then slice bite-sized.
4. Combine pineapple, pear, onion, jalapeño, lime, and cilantro into salsa. Season well.
5. Toast tortillas lightly 30 seconds per side until warm and pliable.
6. Fill tortillas with grilled chicken. Top with salsa. Add cabbage, avocado, lime if you like.
Notes
Keep chicken, salsa, and tortillas separate if making ahead.
Use shrimp or tofu for easy swaps.
