A refreshing tropical no-bake strawberry split cake with layers of creamy cheesecake, juicy strawberries, pineapple pudding, and whipped cream. Perfect for summer parties or easy make-ahead desserts.
Ingredients
2 cups graham cracker crumbs (or digestive biscuits, finely crushed)
½ cup unsalted butter, melted
¼ cup granulated sugar
16 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
2 cups whipped cream (stiff peaks)
2 cups fresh strawberries, sliced
1 can (20 oz) crushed pineapple, drained thoroughly
1 package (3.4 oz) instant vanilla pudding mix
1 cup cold milk
1 cup whipped cream (soft peaks)
Fresh strawberries for garnish
Optional: toasted coconut flakes, mint leaves, or chocolate drizzle
Instructions
1. Mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of a 9×13-inch dish and chill for 10 minutes.
2. Beat cream cheese until smooth, then mix in powdered sugar and vanilla. Fold in whipped cream until fluffy. Spread over crust.
3. Arrange sliced strawberries evenly over the cream layer.
4. Whisk pudding mix with cold milk until thick, then fold in drained pineapple. Spread over strawberries.
5. Top with remaining whipped cream. Garnish with strawberries, coconut, or chocolate drizzle. Chill for at least 4 hours before serving.
Notes
For best results, drain pineapple thoroughly to avoid a watery layer.
This dessert tastes even better after chilling overnight.
