Description
A rich, smoky, one-pot campfire stew made with ground beef, hearty vegetables, and a tomato-beef broth. Perfect for cozy dinners or prepping ahead for the week.
Ingredients
1 lb Ground Beef
1 tbsp Olive Oil
1/2 cup Onion, diced
2 cloves Garlic, minced
4 small Golden Potatoes, halved
2 medium Carrots, sliced
1/2 cup Green Peas
1/2 cup Green Beans, cut into bite-sized pieces
2 cobs Corn, cut into chunks
1.5 cups Beef Broth
1 cup Tomato Sauce
1 tsp Smoked Paprika
Salt and Pepper, to taste
Instructions
1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté for 2–3 minutes, until it turns translucent.
2. Stir in the minced garlic, cooking until fragrant (about 30 seconds).
3. Add ground beef and cook, breaking it apart with a spoon, until browned on all sides and no pink remains. Season lightly with salt and pepper.
4. Toss in the potatoes, carrots, green peas, green beans, and corn. Stir well to combine.
5. Sprinkle smoked paprika over the mixture and pour in the beef broth and tomato sauce. Mix everything together, ensuring the vegetables are mostly submerged in the liquid.
6. Bring the stew to a gentle boil, then reduce the heat to low. Cover and let it simmer for 25–30 minutes, or until the potatoes and carrots are fork-tender.
7. Taste and adjust seasonings with additional salt and pepper, if needed.
8. Serve hot, garnished with fresh herbs or a sprinkle of shredded cheese if you like.
Notes
You can swap ground beef for sausage or shredded chicken.
Freeze leftovers in airtight containers for up to 2 months.
Reheat gently with a splash of broth if it thickens too much.
