Description
Festive White Chocolate Cranberry Pistachio Truffles creamy, crunchy, and sweet no bake dessert recipes easy enough for gifting.
Ingredients
11 oz. white chocolate, chopped small
5 tablespoons unsalted butter
3 tablespoons heavy cream
Pinch of salt
1 teaspoon orange or vanilla extract (optional)
1/3 cup finely chopped dried cranberries
1/3 cup finely chopped toasted pistachio
1/2 cup powdered sugar
Instructions
1. In a small saucepan, melt butter with heavy cream. Stir in salt and extract.
2. Over a double boiler, melt chopped white chocolate slowly. Do not overheat.
3. Gently stir butter-cream mix into melted chocolate. Add cranberries and pistachios. Cover, rest, chill 2–3 hours.
4. Scoop and roll mixture into small balls. Wipe hands after each roll.
5. Coat each truffle in powdered sugar. Store in airtight container in fridge up to 1 week.
Notes
Butter-cream mix should be the same temperature as chocolate when combining.
For vegan truffles, swap coconut cream and vegan white chocolate.
For nut-free, replace pistachios with pumpkin seeds or omit.
